Modig Fitness Eats: Slow Cooker Pulled Pork

Cooking, let alone when you are trying to eat paleo (aka “clean), can be a challenge. When you can find two very simple paleo recipes that use common ingredients, all the better!  This week we will be posting recipes for “Slow Cooker Pulled Pork” and “Shredded Pork Meatloaf,” both courtesy of The Paleo Kitchen cookbook, in which the common ingredient is a bone-in pork shoulder. If you buy a 2-1/2 – 3lb pork shoulder, this should be enough to serve a dinner for four people and then reserve 1lb for the “Shredded Pork Meatloaf” recipe posted later this week.

Photography is not our forte, so please excuse the rather amateur photography, but trust the taste.  This was simple and delicious.

Slow Cooker Pulled Pork

Spice Rub

  • 2 TB paprika
  • 1 TB coarse sea salt
  • 1 TB chili powder
  • 1 TB ground cumin
  • 1/2 TB ground black pepper
  • 1/2 TB dried ground oregano
  • 1/2 TB ground white pepper
  • 1 tsp cayenne pepper

Main Ingredients

  • 2 – 3 lb bone-in pork shoulder.
  • 1 onion
  • 1/4 – 1/2 cup water

Process:

  1. In a small mixing bowl, combine ingredients for the spice rub and mix well.
  2. Massage spice rub all over meat. Wrap tightly in a double layer of plastic wrap and refrigerate for at least 3 hours and up to 48 hours.
  3. Chop onion into large pieces and place on bottom of slow cooker.
  4. Unwrap the meat and place it in a slow cooker. Add water and turn slow cooker to low (or warm if yours cooks faster). Cook for 8 to 10 hours, until the meat is fork-tender.
  5. With the pork still in the slow cooker, use 2 forks to pull it apart.
  6. Enjoy!  (Reserve about 1 lb of the shredded pork to make the “Shredded Pork Meatloaf”).
