Modig Fitness Eats: Shredded Pork Meatloaf

As promised, here is a delicious and simple paleo recipe for “Shredded Pork Meatloaf” that uses leftover pork from “Slow Cooker Pulled Pork.” This recipe is also courtesy of The Paleo Kitchen. Enjoy!

Shredded Pork Meatloaf

Ingredients

  • 1 lb ground beef
  • 1 lb shredded leftover Slow Cooker Pulled Pork
  • 1 small onion, diced
  • 2 tsp garlic powder
  • 2 tsp apprika
  • 1 tsp chili powder
  • coarse sea salt and freshly ground black pepper, to taste
  • coconut oil, for greasing the loaf pan
  • 1/2 – 1 cup homemade paleo BBQ sauce or store bought gluten free BBQ sauce

Process

  1. Preheat oven to 400 degrees Fahrenheit
  2. Place all ingredients, except the BBQ sauce, in a large bowl and mix well (use those hands!)
  3. Grease a 9-by-5 inch loaf pan with coconut oil. Put the beef and pork mixture in the loaf pan and press down to even out the top
  4. Bake for 30 minutes, or until the top of the meatloaf is nicely browned
  5. After removing meatloaf from the oven, top with BBQ sauce and let rest in the pan for 5 minutes before serving.
